Ingredients

  • 4 zucchinis, sliced thinly
  • 5 eggs
  • 1 small onion, finely chopped
  • 100g grated pecorino cheese
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1/2 teaspoon nutmeg (optional)

Method

  1. Slice the zucchini thinly and set aside.
  2. In a non-stick pan, heat the oil and sauté the onion and garlic for a few minutes.
  3. Add the zucchini slices and cook for a few minutes until they are soft.
  4. In a separate bowl, beat the eggs with salt, pepper, and nutmeg (if desired).
  5. Transfer the zucchini and onion mixture to the pan, then pour in the beaten eggs.
  6. Sprinkle with grated pecorino cheese and cook over medium heat until the frittata is done, about 10-12 minutes.
  7. Serve hot or at room temperature, as a lunch or appetizer.
