Zucchini Frittata

A delicious and light frittata made with fresh zucchini and eggs, perfect as a lunch or appetizer.

Ingredients
- 4 zucchinis, sliced thinly
- 5 eggs
- 1 small onion, finely chopped
- 100g grated pecorino cheese
- 2 tablespoons olive oil
- salt and pepper to taste
- 1/2 teaspoon nutmeg (optional)
Method
- Slice the zucchini thinly and set aside.
- In a non-stick pan, heat the oil and sauté the onion and garlic for a few minutes.
- Add the zucchini slices and cook for a few minutes until they are soft.
- In a separate bowl, beat the eggs with salt, pepper, and nutmeg (if desired).
- Transfer the zucchini and onion mixture to the pan, then pour in the beaten eggs.
- Sprinkle with grated pecorino cheese and cook over medium heat until the frittata is done, about 10-12 minutes.
- Serve hot or at room temperature, as a lunch or appetizer.
