White Bean Soup
A traditional Cretan white bean soup, rich in flavor and nutrients.

Ingredients
- 500 g of white beans
- 2 onions
- 3 carrots
- 3 cucumbers
- 2 spring onions
- 2 dried apricots
- 1 chili pepper
- 2 cloves of garlic
- 2 liters of meat broth
- salt and pepper to taste
- Extra virgin olive oil
- Chopped parsley
Method
- Rinse the beans and cook them in boiling water for 30 minutes.
- In a large pot, sauté the garlic, onions, cucumbers, and carrots in a bit of extra virgin olive oil.
- Add the beans, broth, chili pepper, and spices. Let it simmer for 1 hour.
- Finally, add the dried apricots and spring onions. Season to taste.
- Serve hot, garnished with chopped parsley.
