Whangarei Lamb Curry

A delicious Whangarei-style lamb curry, packed with regional spices.

Ingredients
- 800 g of lamb in pieces
- 2 onions, finely chopped
- 2 garlic cloves, finely chopped
- 200 ml of coconut oil
- 200 ml of lamb broth
- 2 tablespoons of curry powder
- 1 tablespoon of black pepper
- 1/2 teaspoon of sugar
- 1/2 teaspoon of chili powder
- chopped lettuce
- 100 ml of lime juice
- 100 g of dried red chili peppers
Method
- In a pot, sauté the onions and garlic in coconut oil.
- Add the curry, black pepper, sugar, and chili powder, stir well.
- Add the lamb broth and bring to a boil, then reduce heat and let simmer for 30 minutes.
- Add the lamb pieces, cover, and cook for 1 hour or until the lamb is tender.
- Finally, add the chopped lettuce and lime juice, stir well, and serve immediately.
- Serving suggestion: served with basmati rice.
