Wellington Lamb Roast

A crispy and tender lamb roast, served with roasted sweet potatoes and vegetables.

Ingredients
- 1 kg lamb
- 2 onions
- 100 g prosciutto
- 2 cloves of garlic
- 100 g carrots
- 100 g potatoes
- 100 g leeks
- 100 g rosemary
- salt and pepper
- olive oil
Method
- Prepare the lamb by cutting the ribs and setting aside the marrow.
- In a bowl, mix the lamb marrow with the prosciutto, garlic, rosemary, salt, and pepper.
- Wrap the lamb with the marrow and prosciutto, tying with a leather string.
- In a roasting pan, place the lamb, onions, carrots, potatoes, and leeks.
- Drizzle with olive oil and season with salt and pepper.
- Preheat the oven to 180°C and roast the lamb for about 2 hours, checking for doneness.
- Serve the lamb with the roasted vegetables and sweet potatoes.
