Ingredients

  • 200 g of flour
  • 150 ml of cold water
  • 1 tablespoon of oil
  • 1 tablespoon of sugar
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of nutmeg
  • 1 egg
  • Sugar powder for decoration
  • 100 g of marzot cheese
  • 100 g of cooked ham
  • 100 g of onion
  • 100 g of cucumber
  • 100 g of tomato

Method

  1. In a bowl, mix the flour, oil, sugar, salt, and nutmeg. Add the cold water and egg, forming a homogeneous dough.
  2. Divide the dough into small balls and shape into small pastries.
  3. In a pan on medium heat, fry the pastries until golden brown.
  4. In another pan, sauté the onion, garlic, and cucumber. Add the tomato and cook for 10 minutes.
  5. Cut the marzot cheese and cooked ham into small pieces and add them to the vegetable sauce.
  6. Place the sauce in the center of the pastries and seal with another piece of pastry.
  7. Decorate the bricks with sugar powder and serve warm.

The story

The Tunisian brick is a culinary tradition dating back to the Ottoman period, when bakers in Sousse used local ingredients to create these exquisite pastries.
