Ingredients

  • 300 g of potatoes
  • 2 eggs
  • 100 g of Alpine cheese
  • 1 tablespoon of sugar
  • Salt to taste
  • 100 g of butter
  • 1 tablespoon of oil for frying
  • Salt
  • Pepper

Method

  1. Peel and boil the potatoes for about 20 minutes or until they are soft.
  2. Let the potatoes cool, then mash them with a masher or fork until you get a smooth puree.
  3. Add the eggs, salt, sugar, and butter, mixing well until you get a homogeneous mixture.
  4. Shape the mixture into balls of equal size.
  5. Dip the balls in a beaten egg, then coat them in a flour and Alpine cheese mixture, covering them completely.
  6. Fry in hot oil over medium heat until they are crispy and golden brown.
  7. Serve hot with a sprinkle of salt and pepper.
