Trentino Potato Pancakes

This traditional Trentino dish is crispy and sweet, deeply rooted in local culture with a rich flavor.

Ingredients
- 300 g of potatoes
- 2 eggs
- 100 g of Alpine cheese
- 1 tablespoon of sugar
- Salt to taste
- 100 g of butter
- 1 tablespoon of oil for frying
- Salt
- Pepper
Method
- Peel and boil the potatoes for about 20 minutes or until they are soft.
- Let the potatoes cool, then mash them with a masher or fork until you get a smooth puree.
- Add the eggs, salt, sugar, and butter, mixing well until you get a homogeneous mixture.
- Shape the mixture into balls of equal size.
- Dip the balls in a beaten egg, then coat them in a flour and Alpine cheese mixture, covering them completely.
- Fry in hot oil over medium heat until they are crispy and golden brown.
- Serve hot with a sprinkle of salt and pepper.
