Ingredients

  • 200 g of toasted bread
  • 500 ml of beef broth
  • 1 onion
  • 2 garlic cloves
  • 100 g of lard
  • 100 g of beans
  • 50 g of parsley
  • salt and pepper to taste
  • extra virgin olive oil

Method

  1. Make the beef broth and let it cool.
  2. Chop the garlic and onion and sauté in a bit of oil.
  3. Add the lard and cook for a few minutes.
  4. In another pot, sauté the toasted bread in a bit of oil.
  5. Add the broth, beans, and spices, bring to a boil.
  6. Mix the broth with the toasted bread and pour into a bowl.
  7. Garnish with parsley and serve hot.

Trentino Bread Soup has its roots in poverty and the need to use every part of the bread. Originating from Bolzano, it became a popular dish during World War I.
