Tinolang Chicken
A traditional Filipino chicken broth packed with vegetables and spices.

Ingredients
- 4 chickens, cut into pieces
- 1 liter of chicken broth
- 2 onions, chopped
- 2 red bell peppers, sliced
- 2 scallions, sliced
- 1 chili, chopped
- 1 red onion, chopped
- 200 g of nappa cabbage, cut into pieces
- 100 g of red onion, cubed
- 2 tablespoons of palm oil
- 2 tablespoons of soy sauce
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Method
- In a large pot, heat the palm oil and sauté the onions until they turn golden.
- Add the chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- In a separate bowl, mix the red onions, chili, lemon juice, soy sauce, and a bit of salt.
- Add the red peppers, scallions, and nappa cabbage to the soup and cook for another 10 minutes.
- Finally, add the chicken pieces, cover, and cook for 20-25 minutes or until the chicken is fully cooked.
- Serve the tinolang manok hot in bowls.
