Tinapa is a traditional Bicol dish, a crispy and delicious smoked salmon piece.

Ingredients
- 1 kg of smoked salmon
- 2 bay leaves
- 2 onions, sliced
- 100 ml of palm oil
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 tablespoon of white vinegar
- 1 tablespoon of red pepper flakes
- 200 g of sweet potatoes, sliced
- 1 lemon
- 1 green onion, sliced
Method
- Clean the smoked salmon and cut it into equal-sized pieces.
- In a pan, heat the palm oil and red pepper flakes over medium heat.
- Add the bay leaves and onion slices. Cook for 5 minutes.
- Add the pieces of smoked salmon, salt, and black pepper. Cook for 10 minutes.
- In a baking dish, place the sweet potato and green onion slices. Drizzle with lemon juice.
- Cover with the smoked salmon pieces and bake at 180°C for 20-25 minutes.
- Serve hot with a sprinkle of chili powder for extra flavor.
The story
Tinapa has origins dating back to the Spanish colonial era, when smoked salmon was commonly used for preservation and later served as a local dish.
