Tétouan Squid

A delicious Moroccan-style baked squid with traditional spices from Tétouan.

Ingredients
- 400 g of squid
- 2 onions
- 1 tablespoon of chili powder
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of vinegar
- 1 tablespoon of sugar
- 2 tablespoons of lemon juice
- 1 tablespoon of salt
- 1/2 teaspoon of black pepper
- Garlic cloves
- 1 clove of cinnamon
- 1 bay leaf
Method
- Clean and cut the squid into pieces about 5 cm long.
- In a bowl, mix the oil, vinegar, lemon juice, salt, pepper, and chili powder.
- Add the squid and spices to the chopped onions and mix well.
- In a pan, put the squid with the onions and spices, add the garlic, cinnamon, and bay leaf.
- Cook over medium heat for 15-20 minutes, stirring occasionally.
- Bake in the oven at 200°C for 10-15 minutes or until the squid is golden.
- Serving: serve the Tétouan Squid hot, garnished with fried onions and lemon juice.
