Tartrata Soup

A rustic and robust soup, typical of the Bucharest region, with a briny flavor and a creamy texture.

Ingredients
- 2 kg of sausage
- 1 kg of chicken
- 1 kg of fish
- 1 liter of meat broth
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 tomatoes
- 1 tablespoon of wine vinegar
- 200 g of polenta
- Salt and pepper to taste
- Extra virgin olive oil
Method
- In a large pot, simmer the sausage and chicken in boiling water for 15 minutes, then drain and let cool.
- In a casserole, sauté the onions, carrots, and cucumber in a bit of extra virgin olive oil.
- Add the fish cut into pieces and cook for 10 minutes.
- Add the meat broth and bring to a boil, then add the vegetables and cook for 30 minutes.
- Add the wine vinegar and salt and pepper to taste.
- In another pot, cook the polenta in a little water, then mix it into the soup.
- Serve hot.
The story
Tartrata soup is a traditional Romanian soup, particularly popular in cities like Bucharest. Originally made with fish and seafood, it now includes various ingredients while still retaining its briny essence.
