A delicious and traditional Northeastern Brazilian dish, tapioca with cheese is a crispy tapioca crepe filled with fresh cheese.

Ingredients
- 200g of tapioca
- 200g of fresh cheese
- 1 egg
- 1 tablespoon of oil
- Salt to taste
- Pepper to taste
- 100g of flour
- Water for cutting
Method
- In a bowl, mix the tapioca with water to obtain a homogeneous dough.
- Add the oil, egg, salt, and pepper, and mix well.
- In a non-stick pan, pour a little dough and cook until it becomes golden brown.
- In a bowl, mix the cheese with the flour.
- Place the tapioca crepe on a plate, fill it with the cheese mixture, and fold it in.
- Cover with another tapioca crepe and cook for another 2-3 minutes.
- Serve hot, garnishing with a bit of pepper and oil.
