Ingredients

  • 250 g of hard wheat flour
  • 3 eggs
  • Salt to taste
  • 150 g of porcini mushrooms
  • 50 g of butter
  • 50 g of onion
  • 50 g of cooked ham
  • 100 ml of meat broth
  • 100 ml of milk
  • Salt and pepper to taste
  • Oil for frying
  • Chopped parsley for serving

Method

  1. In a bowl, mix the flour with salt and make a well in the center. Add the eggs and mix with your hands until you get a homogeneous dough.
  2. Place the dough between two sheets of parchment paper and run it through a tajarin cutter.
  3. Heat the butter in a pan and sauté the onion and cooked ham.
  4. Add the sliced porcini mushrooms and cook until they are soft.
  5. In a bowl, mix the meat broth, milk, salt, and pepper, then pour the sauce into a pan and bring to a boil.
  6. Add the pasta to the broth and cook for 2-3 minutes to absorb the flavors.
  7. Serve hot with chopped parsley.
  8. Beat the eggs in a bowl and fry them in hot oil to make tajarin fritters.

The story

Tajarin originated in the Aosta Valley's mountains, where pasta has always been an important part of local cuisine, especially during long winters when mushroom hunting was a significant activity.
