Tafelspitz
A traditional Austrian dish, Tafelspitz is a refined beef dish slowly cooked to perfection, served with a crispy crust and an exquisite taste.

Ingredients
- 1 kg of beef
- 1 onion
- 2 carrots
- 2 cloves
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 liter of water
- 1 bay leaf
- 1 thyme leaf
- 2 dates
- 2 cardamom seeds
Method
- Cut the beef into pieces about 2 x 2 cm, then soak it in cold water for 15 minutes.
- In a pot, put the water, chopped carrots, halved onion, bay leaf, thyme leaf, dates, and spices.
- Add the beef and bring to a boil, then reduce the heat and cook slowly for 4-5 hours.
- Once cooked, let the beef cool down, then cool the water with the beef and remove the excess fat.
- Let the beef cool completely, then slice it into thick slices.
- Serve it cold with a crispy crust made with beef fat and carrots.

Tafelspitz has roots in the 18th century, originating from the Austrian regions where it was served on luxurious tables to celebrate significant social events.
