Stuffed Courgettes

Kousa Mahshi is a traditional Lebanese dish that combines the taste of rice and the aroma of vegetables stuffed into courgettes.

Ingredients
- 4 courgettes
- 150 g of roasted rice
- 1 onion
- 2 tomatoes
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 100 g of feta cheese
- 100 g of leafy vegetables (scallions, small onions)
- 1 teaspoon of sugar
- Water for cooking the vegetables
Method
- Prepare the courgettes by trimming a bit of the edge to prevent them from spilling during cooking.
- Boil the leafy vegetables and chop them into small pieces.
- Fill the courgettes with the roasted rice, vegetables, and feta cheese, mixing well.
- Serve with the vegetable sauce and season with salt, pepper, and sugar.
- Cook on low heat for 30-40 minutes until the courgettes are soft.
The story
Kousa Mahshi has its roots in Mediterranean cuisine but has become particularly popular in Lebanon. It has been prepared for generations as a festive and celebratory dish.
