Ingredients

  • 4 courgettes
  • 150 g of roasted rice
  • 1 onion
  • 2 tomatoes
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 100 g of feta cheese
  • 100 g of leafy vegetables (scallions, small onions)
  • 1 teaspoon of sugar
  • Water for cooking the vegetables

Method

  1. Prepare the courgettes by trimming a bit of the edge to prevent them from spilling during cooking.
  2. Boil the leafy vegetables and chop them into small pieces.
  3. Fill the courgettes with the roasted rice, vegetables, and feta cheese, mixing well.
  4. Serve with the vegetable sauce and season with salt, pepper, and sugar.
  5. Cook on low heat for 30-40 minutes until the courgettes are soft.

The story

Kousa Mahshi has its roots in Mediterranean cuisine but has become particularly popular in Lebanon. It has been prepared for generations as a festive and celebratory dish.
