Ingredients

  • 300g of slightly sweet, caramelized potatoes
  • 100g of zucchini
  • 1 onion
  • 50g of butter
  • 50g of olive oil
  • 100g of lard
  • 1 tablespoon of white wine vinegar
  • salt and pepper to taste

Method

  1. Peel and cut the slightly sweet, caramelized potatoes into small cubes.
  2. In a pan, melt the butter and olive oil, then add the potatoes and onion.
  3. Sauté the potatoes and onion for about 10 minutes, until the potatoes are soft.
  4. Add the lard and white wine vinegar, stir well.
  5. Cook on low heat for another 5-10 minutes, seasoning with salt and pepper.
  6. Add the thinly sliced zucchini and cook for another 3-5 minutes.
  7. Serve hot, garnished with chopped parsley.
