Ingredients

  • 200g spinach
  • 150g flour
  • 1 egg
  • 50g butter
  • 150g lard
  • 1 onion
  • salt and pepper to taste
  • 1/2 teaspoon red pepper flakes
  • oil for frying

Method

  1. Wash and chop the spinach with a bit of salt. Let it cool down.
  2. In a bowl, mix the flour with butter and crumbled lard. Add the egg and mix until you get a homogeneous dough.
  3. Stretch the index and middle fingers on a baking paper. Spread the dough over it, leaving a margin around.
  4. Add the spinach, salt, pepper, and red pepper flakes. Close the Empanada and cut with a cookie cutter.
  5. Fry the empanadas in hot oil until golden and crispy.
  6. Serve hot with soy sauce or hot sauce.

The story

Spinach empanadas were introduced to Galicia by Spanish sailors returning from their voyages, who had learned them during their expeditions in America. This dish became an important part of Galician cuisine, adapting spices and local ingredients.
