Sour Celery Soup

A sour vegetable soup with an unmistakably Romanian taste, perfect for cold days.

Ingredients
- 500g of fresh celery
- 200g of potatoes
- 100g of zucchini
- 50g of onion
- 200ml of vinegar
- 200ml of vegetable broth
- 100ml of olive oil
- 1 teaspoon of black pepper
- Salt to taste
Method
- Wash the celery well and cut the pieces into about 5 cm segments.
- Peel and cut the potatoes and zucchini into cubes.
- In a large pan, heat the olive oil and sauté the onion until it becomes golden.
- Add the celery pieces, potatoes, and zucchini, and sauté for a few minutes.
- Pour in the vegetable broth and vinegar, bring to a boil, and simmer on medium heat for 30-40 minutes.
- Mince the celery with a knife or a mixer and gently mix it into the broth.
- Turn off the heat and add salt and black pepper to taste.
- Serve hot, accompanied by a slice of toasted bread.
The story
The ciorbă de ceapă is a traditional Romanian dish that dates back to the time of the independence war, when families used their vegetable reserves to prepare this sour broth.
