Ingredients

  • 500g of fresh celery
  • 200g of potatoes
  • 100g of zucchini
  • 50g of onion
  • 200ml of vinegar
  • 200ml of vegetable broth
  • 100ml of olive oil
  • 1 teaspoon of black pepper
  • Salt to taste

Method

  1. Wash the celery well and cut the pieces into about 5 cm segments.
  2. Peel and cut the potatoes and zucchini into cubes.
  3. In a large pan, heat the olive oil and sauté the onion until it becomes golden.
  4. Add the celery pieces, potatoes, and zucchini, and sauté for a few minutes.
  5. Pour in the vegetable broth and vinegar, bring to a boil, and simmer on medium heat for 30-40 minutes.
  6. Mince the celery with a knife or a mixer and gently mix it into the broth.
  7. Turn off the heat and add salt and black pepper to taste.
  8. Serve hot, accompanied by a slice of toasted bread.

The story

The ciorbă de ceapă is a traditional Romanian dish that dates back to the time of the independence war, when families used their vegetable reserves to prepare this sour broth.
