Sfaxian Brick

A traditional Sfaxian brick, crispy and delicious, evoking the flavors of Tunisia.

Ingredients
- 200 g of flour
- 120 ml of warm water
- 1 tablespoon of salt
- 1 tablespoon of oil
- 50 g of butter
- 100 g of feta cheese
- 100 g of dried beans
- 1 onion
- 1 garlic clove
- 100 ml of olive oil
- Salt and pepper to taste
- 1 egg
Method
- Mix the flour, warm water, salt, and oil to form a soft dough.
- Let the dough rise for 30 minutes covered with a damp cloth.
- Make the filling by mixing the beans, chopped garlic, olive oil, feta cheese, and salt and pepper to taste.
- Divide the dough into pieces and form balls.
- Cook the balls in boiling water for 10 minutes.
- Cover the balls with the filling and seal well.
- Make the crackling with butter in a skillet and sprinkle over the bricks.
- Cook the bricks in a non-stick skillet with the crackling until they are crispy.
- Serve hot with a drizzle of olive oil and salt to taste.
