A traditional dish from Trujillo, Seco de Cabra is a exquisite and robust stew, rich in flavors.

Ingredients
- 2 kg of goat meat, cut into pieces
- 1 liter of red wine
- 2 onions, halved
- 2 carrots, cut into pieces
- 2 cloves of garlic
- 1 chili pepper
- 1 liter of water
- 200 g of beans
- 200 g of potatoes
- 50 g of zucchini
- salt and pepper to taste
- 2 basil leaves
Method
- In a large pan or casserole, place the goat meat and red wine. Bring to a boil and simmer over medium heat for 30 minutes.
- Add the onions, carrots, garlic, and chili pepper. Stir well and cook for another 15 minutes.
- In a bowl, mix the water, beans, potatoes, and zucchini. Add this mixture to the pan and stir.
- Bring to a boil, reduce the heat, and cover. Let it simmer for 1 hour, checking occasionally.
- Add the basil leaves and taste the broth, adding salt and pepper if needed. Continue to cook over low heat for another 15 minutes.
- Serve hot, accompanied by toasted bread.
