Ingredients

  • 2 kg of goat meat, cut into pieces
  • 1 liter of red wine
  • 2 onions, halved
  • 2 carrots, cut into pieces
  • 2 cloves of garlic
  • 1 chili pepper
  • 1 liter of water
  • 200 g of beans
  • 200 g of potatoes
  • 50 g of zucchini
  • salt and pepper to taste
  • 2 basil leaves

Method

  1. In a large pan or casserole, place the goat meat and red wine. Bring to a boil and simmer over medium heat for 30 minutes.
  2. Add the onions, carrots, garlic, and chili pepper. Stir well and cook for another 15 minutes.
  3. In a bowl, mix the water, beans, potatoes, and zucchini. Add this mixture to the pan and stir.
  4. Bring to a boil, reduce the heat, and cover. Let it simmer for 1 hour, checking occasionally.
  5. Add the basil leaves and taste the broth, adding salt and pepper if needed. Continue to cook over low heat for another 15 minutes.
  6. Serve hot, accompanied by toasted bread.

The story

Seco de Cabra has its origins in the Trujillo region, where it was long a staple dish in the homes of farmers.
