Seafood Rice
A warm and flavorful dish, the Seafood Rice is a classic of Portuguese cuisine.

Ingredients
- 200g of toasted rice
- 400g of prawns
- 200g of mussels
- 100g of clams
- 200g of cockles
- 1 onion
- 2 garlic cloves
- 200ml of white wine
- 100ml of olive oil
- 100ml of fish broth
- salt and pepper to taste
- 100g of chopped parsley
Method
- In a pan, sauté the garlic and onion in olive oil.
- Add the prawns, mussels, clams, and cockles, and cook over medium heat for 5-7 minutes.
- In another pan, cook the toasted rice with white wine for 2-3 minutes.
- Add the fish broth and let it boil for 10 minutes.
- Combine the seafood sauce with the rice, stir well, and cook for another 5-7 minutes.
- Periodically, check the cooking and add salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
