Sauerkraut with Sausage and Eggs

A rustic classic from Northern Italy, reminiscent of the traditional sauerkraut with sausage and eggs from the Northern Netherlands.

Ingredients

  • 1 kg of sauerkraut
  • 400 g of wurst (sausage)
  • 4 eggs
  • 2 onions
  • 2 pork dices
  • 200 ml of olive oil
  • Salt and pepper to taste
  • 1 tablespoon of sugar
  • 100 ml of dry white wine
  • 200 g of grana cheese
  • 100 g of chopped parsley

Method

  1. In a pan, sauté the olive oil with onions and pork dices over medium heat.
  2. Add the sliced wurst and cook for 5-7 minutes.
  3. Add the sauerkraut and white wine, cover, and cook over medium heat for 20-25 minutes.
  4. Meanwhile, poach the eggs in boiling water for 2-3 minutes.
  5. Top the sauerkraut with grated grana cheese and chopped parsley.
  6. Place a poached egg on top of each portion.
  7. Serve immediately with a slice of wurst and a generous portion of sauerkraut.
  8. Enjoy your meal!

The story

This recipe is a modern interpretation of a traditional dish from the Northern Netherlands, particularly popular in the Twente region, which has also found its way to Italy.
