Sauerkraut with Sausage and Eggs

A rustic classic from Northern Italy, reminiscent of the traditional sauerkraut with sausage and eggs from the Northern Netherlands.

Ingredients
- 1 kg of sauerkraut
- 400 g of wurst (sausage)
- 4 eggs
- 2 onions
- 2 pork dices
- 200 ml of olive oil
- Salt and pepper to taste
- 1 tablespoon of sugar
- 100 ml of dry white wine
- 200 g of grana cheese
- 100 g of chopped parsley
Method
- In a pan, sauté the olive oil with onions and pork dices over medium heat.
- Add the sliced wurst and cook for 5-7 minutes.
- Add the sauerkraut and white wine, cover, and cook over medium heat for 20-25 minutes.
- Meanwhile, poach the eggs in boiling water for 2-3 minutes.
- Top the sauerkraut with grated grana cheese and chopped parsley.
- Place a poached egg on top of each portion.
- Serve immediately with a slice of wurst and a generous portion of sauerkraut.

This recipe is a modern interpretation of a traditional dish from the Northern Netherlands, particularly popular in the Twente region, which has also found its way to Italy.
