Sarawak Laksa

A spicy, warming broth with noodles and vegetables, reminiscent of the heart of Burma.

Ingredients
- 200g of vermicelli
- 1 liter of chicken broth
- 1 green chili
- 1 onion
- 2 cloves of garlic
- 100g of seafood (shrimp, clams, oysters)
- 1 tablespoon of chili powder
- 1 tablespoon of coriander
- 1 tablespoon of sambal oelek
- 1 lemon
- Salt to taste
- Pepper to taste
Method
- In a pot, bring the chicken broth and sliced green chili to a boil.
- In another pot, sauté the garlic and onion in a bit of oil.
- Add the seafood and cook for 5-7 minutes.
- In a bowl, mix the chili powder, coriander, and sambal oelek together.
- Add this mixture to the broth and stir well.
- Add the vermicelli to the broth and cook for 2-3 minutes.
- Squeeze the lemon and add the juice to the broth.
- Serve the vermicelli and seafood in bowls, pouring the broth over them and serve immediately.

Sarawak Laksa is a fusion of Malay, Indonesian, and Burmese culinary traditions, with a strong local touch from Sarawak.
