Saqain is a traditional Jeddah sauce that is uniquely intense and rich in flavor.

Ingredients
- 200 g of red onion
- 100 g of tomato
- 50 g of saffron
- 50 g of fresh ginger
- 30 g of turmeric
- 20 g of chili
- 200 ml of olive oil
- salt to taste
- water to taste
Method
- Clean and chop the red onion and tomato into cubes.
- In a pan, sauté the red onion in olive oil over medium heat.
- Add the tomato and cook for about 10 minutes, until it becomes soft.
- In a separate bowl, mix the saffron, turmeric, and chili.
- Combine the saffron and spice mixture with the sautéed onion and tomato, stirring well.
- Cook for another 5 minutes, adding a little water if needed to maintain the consistency.
- Serving: serve cold or warm, this sauce is perfect as a condiment for rice or as an accompaniment for meat.
