A delicious Sanuki Udon, with the typical taste of Kagawa region, served with a robust broth and fresh vegetables.

Ingredients
- 500g of udon noodles
- 1 liter of vegetable broth
- 1 onion
- 1 carrot
- 1 red bell pepper
- 100g of shiitake mushrooms
- 2 tablespoons of soybean oil
- 1 tablespoon of soy sauce
- Salt and pepper to taste
- 2 scallions
- 200g of tofu
- 100g of spinach
- 200g of broccoli
Method
- In a pot, prepare the vegetable broth and add sliced shiitake mushrooms. Boil for 10 minutes.
- In a pan, sauté the soybean oil with the chopped onion and carrot for 5 minutes.
- Add the sliced red bell pepper and broccoli, cook for 5 minutes.
- In the pot with the broth, add the shiitake mushrooms and boil for 5 minutes.
- In another pot, cook the udon according to the manufacturer's instructions.
- Serve the udon in a warm bowl, pouring the broth over it and adding the sautéed vegetables and vegetables.
- Add the tofu and blended spinach, mixing well.
- Season with salt and pepper to taste.

Sanuki Udon originated in the Kagawa region, specifically in the city of Naruto, where it was perfected in the 19th century. It is renowned for its thin and soft noodle, which is distinguished by its unique texture.
