Sancochito

Sancochito is a delicious traditional Peruvian stew, particularly popular in the Ayacucho region, rich in vegetables and pork meat.

Ingredients
- 2 lbs of pork meat, cut into pieces
- 2 onions, sliced
- 2 carrots, sliced
- 2 zucchinis, sliced
- 1 liter of meat broth
- 200 g of beans
- 200 g of sweet potatoes, cubed
- 200 g of pumpkin, cubed
- 1 tablespoon of chili powder
- 2 tablespoons of palm oil
- Salt and pepper to taste
- Spices for serving
Method
- In a large pot, heat the palm oil and sauté the onions until they become golden brown.
- Add the carrots, zucchinis, chili powder, salt, and pepper, and sauté for another 5-7 minutes.
- Add the pork meat and cook for 10-15 minutes, until the meat starts to simmer.
- Add the meat broth and beans, bringing to a boil.
- Simmer on medium heat for 1 hour, stirring occasionally, until the meat is well cooked and the vegetables are soft.
- Finally, add the sweet potatoes and pumpkin, and cook for another 20-30 minutes, until these are also cooked.
- Serve hot, garnished with spices.
The story
Sancochito originates from the Ayacucho region, where it has been prepared for generations as a way to use up abundant vegetables and leftover meat.
