Sancochito is a delicious traditional Peruvian stew, particularly popular in the Ayacucho region, rich in vegetables and pork meat.

Ingredients

  • 2 lbs of pork meat, cut into pieces
  • 2 onions, sliced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 liter of meat broth
  • 200 g of beans
  • 200 g of sweet potatoes, cubed
  • 200 g of pumpkin, cubed
  • 1 tablespoon of chili powder
  • 2 tablespoons of palm oil
  • Salt and pepper to taste
  • Spices for serving

Method

  1. In a large pot, heat the palm oil and sauté the onions until they become golden brown.
  2. Add the carrots, zucchinis, chili powder, salt, and pepper, and sauté for another 5-7 minutes.
  3. Add the pork meat and cook for 10-15 minutes, until the meat starts to simmer.
  4. Add the meat broth and beans, bringing to a boil.
  5. Simmer on medium heat for 1 hour, stirring occasionally, until the meat is well cooked and the vegetables are soft.
  6. Finally, add the sweet potatoes and pumpkin, and cook for another 20-30 minutes, until these are also cooked.
  7. Serve hot, garnished with spices.

The story

Sancochito originates from the Ayacucho region, where it has been prepared for generations as a way to use up abundant vegetables and leftover meat.
