Salt-Baked Sardines

A classic of Algarve cuisine, salt-baked sardines are a delicious and simple dish to prepare.

Ingredients
- 4 sardine fillets
- 2 cloves of garlic
- 1 lemon
- 100g coarse salt
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 finely chopped onion
Method
- Prepare a rectangular layer of coarse salt on a work surface.
- Smooth it out with your hands, creating a slight depth.
- In a baking dish, place the salt and make a small well in the center.
- Spread the olive oil and garlic in the well.
- Add the chopped onion and sardine fillets, arranging them to cover the well.
- Cover with the remaining salt and gently press down.
- Let it rest in the refrigerator for 30 minutes.
- Bake in a preheated oven at 180°C for 30-40 minutes, checking for doneness.
- Serving: serve with the juice that has formed underneath the sardine.
The story
Salt-baked sardines were introduced to the Portuguese Algarve by sailors, who used them to preserve fish during long voyages.
