A classic of Algarve cuisine, salt-baked sardines are a delicious and simple dish to prepare.

Ingredients

  • 4 sardine fillets
  • 2 cloves of garlic
  • 1 lemon
  • 100g coarse salt
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 finely chopped onion

Method

  1. Prepare a rectangular layer of coarse salt on a work surface.
  2. Smooth it out with your hands, creating a slight depth.
  3. In a baking dish, place the salt and make a small well in the center.
  4. Spread the olive oil and garlic in the well.
  5. Add the chopped onion and sardine fillets, arranging them to cover the well.
  6. Cover with the remaining salt and gently press down.
  7. Let it rest in the refrigerator for 30 minutes.
  8. Bake in a preheated oven at 180°C for 30-40 minutes, checking for doneness.
  9. Serving: serve with the juice that has formed underneath the sardine.

The story

Salt-baked sardines were introduced to the Portuguese Algarve by sailors, who used them to preserve fish during long voyages.
