Ingredients

  • 400 grams of artichokes
  • 500 ml of extra virgin olive oil
  • 100 ml of dry white wine
  • 100 grams of sugar
  • 100 grams of salt
  • 200 ml of water
  • 100 grams of parsley
  • 100 grams of onion
  • 100 ml of balsamic vinegar
  • 100 grams of red peppers
  • 100 grams of green peppers
  • 100 grams of yellow peppers

Method

  1. Clean the artichokes thoroughly and cut them in half along the edge.
  2. In a pot, mix the olive oil, wine, salt, and sugar.
  3. Bring the mixture to a boil, then add the artichokes and simmer for 2 hours on low heat.
  4. Layer peppers and onion over the artichokes in the serving dish.
  5. Pour the sauce over the artichokes and garnish with parsley.
  6. Let it cool before serving.
  7. Serve chilled to maintain crispiness.
