Ingredients

  • 500g of lamb cut into pieces
  • 4 large onions, finely chopped
  • 1/2 cup plain yogurt
  • 3-4 cloves of garlic, crushed
  • 3-4 peeled and diced tomatoes
  • 1 teaspoon turmeric powder
  • 2 teaspoons black pepper powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon ground green cardamom
  • 1/4 teaspoon ground cloves
  • 3-4 bay leaves
  • vegetable oil

Method

  1. In a large skillet, sauté the crushed garlic and chopped onions in vegetable oil until they are soft and golden.
  2. Add the ground black pepper, turmeric, cinnamon, green cardamom, and cloves. Stir well for 1-2 minutes.
  3. Stir in the lamb pieces into the skillet with the spices and cook over medium-high heat until it starts to brown.
  4. Add the peeled and diced tomatoes, yogurt, and bay leaves. Mix well to combine ingredients.
  5. Bring everything to a simmer, reduce heat, and let it cook on low for 45-60 minutes or until the meat is tender and fully cooked.

Rogan Josh is a traditional dish from the Kashmir region that dates back centuries. Originally a vegetarian preparation with tomatoes and red peppers, it has evolved over time to include lamb.
