Ingredients

  • 1 lamb of 2-2.5 kg
  • 1 tablespoon of salt
  • 2 tablespoons of black pepper
  • 2 onions, sliced
  • 2 cloves of garlic, minced
  • 200 ml of extra virgin olive oil
  • 100 g of fresh mint, chopped
  • 50 ml of water
  • 50 ml of lemon juice
  • 1 tablespoon of sugar
  • 1 teaspoon of lemon juice
  • 1 tablespoon of honey

Method

  1. Take the lamb and spread the olive oil on the belly and legs. Sprinkle salt and pepper over the meat.
  2. Roast the lamb at 180°C for about 2 hours, checking the internal temperature with a meat thermometer.
  3. While the lamb is roasting, mix the onions, garlic, olive oil, mint, water, lemon juice, sugar, and honey in a bowl.
  4. Boil the sauce for 10 minutes, reducing the consistency.
  5. Just before serving, add the lemon juice and honey, stir, and serve the lamb with the mint sauce.

Roast lamb with mint sauce became popular in Australia in the 19th century when English settlers brought their culinary traditions. In Sydney, this dish has become a celebratory meal, often served during holidays and family gatherings.
