A delightful ricotta cake that honors the traditions of Liguria.

Ingredients
- 250 g of ricotta
- 150 g of sugar
- 100 g of flour
- 2 eggs
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking soda
- 100 g of butter
- 100 g of chopped almonds
- 100 g of dark chocolate
Method
- In a bowl, mix the ricotta, sugar, eggs, vanilla, and baking soda.
- In another bowl, mix the flour with melted butter and add the previous mixture.
- Add the chopped almonds and dark chocolate, mix well.
- Check the consistency, if needed add a bit more flour.
- Form a cake in a disc shape and bake at 180°C for 30-35 minutes.
- Let it cool before serving.
The story
The Ricotta Cake is a specialty of the city of Luino, one of many recipes that stem from the rich culinary tradition of Liguria. Originally, it was made with goat's milk ricotta, but today it is usually prepared with sheep's or cow's milk ricotta.
