Quindim is a traditional Brazilian Northeastern dessert, soft and rich in eggs and sugar.

Ingredients
- 4 eggs
- 200 grams of sugar
- 100 grams of flour
- 1 teaspoon of caster sugar
- 1 teaspoon of rum
- 1 teaspoon of water
- 1 teaspoon of saffron (optional)
Method
- Prepare the caramelization pan: put the sugar in a pan and cook over medium heat until it turns golden and becomes caramel.
- In another pan, beat the eggs with caster sugar, rum, and water.
- Add the flour and mix well to form a smooth batter.
- Pour the batter into the caramelized pan.
- Preheat the oven to 180°C and bake the Quindim for 30-35 minutes, until the surface is golden.
- Let it cool and serve cold.
