A classic of Michoacán cuisine, Queso Fundido con Chiles is a hot and delicious cheese dip served with potato tortillas.

Ingredients

  • 500 g of cheddar cheese
  • 100 g of round cheese
  • 100 g of cotija cheese
  • 6-8 red peppers
  • 2 onions
  • 3 tablespoons of butter
  • 1/2 cup of cream
  • 1/2 cup of chicken broth
  • salt and pepper to taste
  • potato tortillas for serving

Method

  1. Prepare the red peppers by slicing them and sauté them in a pan with butter until they are soft.
  2. Chop the onions and garlic, then add them to the pan with the peppers. Cook until the onions are translucent.
  3. In another pan, mix the cheddar cheese, round cheese, and cotija cheese. Add the cream and chicken broth, stirring well.
  4. Combine the pepper sauce and vegetables with the cheese mixture in the pan, add salt and pepper to taste.
  5. Heat over medium heat until the cheese is fully melted and the sauce is warm.
  6. Serve immediately with potato tortillas.

Originally prepared by the farmers of Michoacán, Queso Fundido con Chiles was a way to warm up and enjoy a rich and warm dish during cold days.
