Pugliese White Beans

A delicious Pugliese white bean soup, crunchy and soft at the same time.

Ingredients
- 500 g of white beans
- 2 onions
- 3 carrots
- 2 celery sticks
- 2 anise pods
- 2 fennel seeds
- 200 ml of extra virgin olive oil
- 1 liter of legume broth
- salt and pepper to taste
- 100 g of chopped parsley
- 200 g of Tuscan bread cut into cubes
Method
- Heat the oil in a pot and sauté the onions, carrots, and celery until golden.
- Add the anise and fennel pods, sauté for a few minutes.
- Add the beans and legume broth, bring to a boil and simmer on low heat for about 1 hour.
- Mash the beans with a masher or blender, but not too much to keep a crunchy texture.
- Add the parsley and the bread cubes, mix well.
- Serve hot in bowls.
