Ingredients

  • 500 g of white beans
  • 2 onions
  • 3 carrots
  • 2 celery sticks
  • 2 anise pods
  • 2 fennel seeds
  • 200 ml of extra virgin olive oil
  • 1 liter of legume broth
  • salt and pepper to taste
  • 100 g of chopped parsley
  • 200 g of Tuscan bread cut into cubes

Method

  1. Heat the oil in a pot and sauté the onions, carrots, and celery until golden.
  2. Add the anise and fennel pods, sauté for a few minutes.
  3. Add the beans and legume broth, bring to a boil and simmer on low heat for about 1 hour.
  4. Mash the beans with a masher or blender, but not too much to keep a crunchy texture.
  5. Add the parsley and the bread cubes, mix well.
  6. Serve hot in bowls.
