Ingredients

  • 1 kg of beef cut into pieces
  • 2 onions
  • 2 carrots
  • 1 zucchini
  • 2 tomatoes
  • 1 pepper
  • 1 spring onion
  • 1 courgette
  • 1 tablespoon of black pepper
  • 1 tablespoon of salt
  • 1 tablespoon of cayenne pepper
  • 200 ml of red wine

Method

  1. Prepare the cast-iron pot: make sure it is clean and dry before starting.
  2. In a bowl, chop the onions, carrots, pepper, and spring onion.
  3. Place the meat in the center of the pot and around the chopped vegetables.
  4. Pour the red wine over the meat and vegetables, ensuring everything is covered.
  5. Cover the pot and cook on low heat for 2-3 hours, checking occasionally to make sure the pot does not dry out.
  6. Add the zucchini and tomatoes during the last hour of cooking.
  7. Serve the potjiekos hot in a bowl.

The story

Originating from the Afro-Asian culture of the Cape, potjiekos was traditionally prepared with local ingredients and beef.
