Potato Empanada

A classic of Galician cuisine, these potato empanadas are crispy and delicious.

Ingredients
- 400g of cooked and peeled potatoes
- 100g of smoked bacon
- 100g of onion
- 50g of butter
- 50g of flour
- 2 eggs
- Salt and pepper
- 300g of pastry flour
- Oil for frying
Method
- Peel and cook the potatoes, then let them cool and peel them again.
- Cut the smoked bacon and onion.
- In a pan, melt the butter and add the bacon and onion, sauté until golden brown.
- Add the peeled potatoes, season with salt and pepper.
- In another bowl, mix the egg with the flour and milk, form the dough.
- Divide the dough into pieces and wrap the sautéed potatoes.
- Make the empanadas and fry them in hot oil until golden brown.
- Serve warm.
The story
Potato empanadas were introduced to Galicia by Spanish sailors, who prepared them for long voyages, making food easier to carry and preserve.
