Port Said Shakshuka Sandwich

A delicious sandwich with fried eggs in a tomato and chili sauce, served with crispy bread.

Ingredients
- 4 eggs
- 2 ripe tomatoes
- 2 onions
- 2 tablespoons of olive oil
- 1 tablespoon of chili
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of sugar
- 1/2 cup of zucchini
- 1/2 cup of bell peppers
- 1/2 cup of crispy bread cut into slices
- Salt and pepper to taste
- 1 tablespoon of tahini
Method
- Peel and dice the onions and zucchini. Slice the bell peppers thinly.
- In a pan, sauté the onions with olive oil and chili.
- Add the diced tomatoes, balsamic vinegar, sugar, salt, and pepper. Cook over medium heat for 10-15 minutes.
- Cook the eggs individually in a separate pan, pouring one egg at a time and letting it cook over low heat.
- Assemble the sandwiches by placing a slice of bread, some shakshuka sauce, and a fried egg on top.
- Squeeze a bit of tahini on the sandwich before serving.
The story
Port Said's shakshuka has a history dating back to the British occupation era, when British sailors and Egyptians combined to create this unique version of shakshuka.
