Ingredients

  • 4 eggs
  • 2 ripe tomatoes
  • 2 onions
  • 2 tablespoons of olive oil
  • 1 tablespoon of chili
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of sugar
  • 1/2 cup of zucchini
  • 1/2 cup of bell peppers
  • 1/2 cup of crispy bread cut into slices
  • Salt and pepper to taste
  • 1 tablespoon of tahini

Method

  1. Peel and dice the onions and zucchini. Slice the bell peppers thinly.
  2. In a pan, sauté the onions with olive oil and chili.
  3. Add the diced tomatoes, balsamic vinegar, sugar, salt, and pepper. Cook over medium heat for 10-15 minutes.
  4. Cook the eggs individually in a separate pan, pouring one egg at a time and letting it cook over low heat.
  5. Assemble the sandwiches by placing a slice of bread, some shakshuka sauce, and a fried egg on top.
  6. Squeeze a bit of tahini on the sandwich before serving.

The story

Port Said's shakshuka has a history dating back to the British occupation era, when British sailors and Egyptians combined to create this unique version of shakshuka.
