These Cagliari pork sausages are exquisite, with an intense flavor and a touch of traditional aromas.

Ingredients
- 500g of pork
- 200g of pancetta
- 100g of cooked ham
- 200g of toasted bread, crumbled
- 2 eggs
- 2 tablespoons of chopped parsley
- 1 tablespoon of red pepper flakes
- 1 teaspoon of salt
- 1 teaspoon of black pepper
Method
- In a bowl, mix the pork, pancetta, cooked ham, crumbled bread, eggs, parsley, red pepper flakes, salt, and black pepper.
- Cut the mixture into small pieces and put it into a sausage casing.
- Fill the sausage casings with the mixture, sealing them tightly.
- Let the sausages rest in the refrigerator for at least 2 hours.
- Cook them on medium heat for 30-40 minutes, turning them frequently to ensure they are evenly cooked.
- Serve them hot, perfect with a good tomato sauce or baked potatoes.
