  • 4 pork belly chops
  • 400 ml of mustard sauce
  • 100 g of butter
  • 100 g of sliced zucchini
  • 100 g of sliced carrots
  • 100 g of cubed onions
  • 10 basil leaves
  • Salt and pepper to taste
  • 2 tablespoons of white wine vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of sugar

Method

  1. Prepare the pork belly chops by trimming the ends and brushing them with a bit of mustard sauce.
  2. Fry the pork belly in a pan with butter for about 5 minutes on each side, until they are crispy.
  3. In a saucepan, sauté the zucchini, carrots, and onions in a bit of butter, add the basil leaves, salt, and pepper.
  4. Add the mustard sauce, white wine vinegar, lemon juice, and sugar, stir well and bring to a boil.
  5. Place the pork belly in the mustard sauce and let it simmer for 5-10 minutes, until the sauce is thick and the pork is fully coated.
  6. Serve the pork belly with the mustard sauce hot, garnished with the vegetables and basil leaves.
