Porcheddu is a traditional Sardinian dish made with wild boar meat, crispy and full of flavor.

Ingredients
- 500 g of wild boar meat
- 2 onions
- 2 garlic cloves
- 200 g of raw prosciutto
- 100 g of zucchini
- 50 g of parsley
- 1 lemon
- extra virgin olive oil
- salt and pepper
Method
- Cut the wild boar meat into even pieces and season with salt and pepper.
- In a pan, start cooking the extra virgin olive oil, add the onions and garlic, and sauté on medium heat.
- Add the wild boar meat and cook for 20-25 minutes on medium heat, stirring occasionally.
- Cut the raw prosciutto into strips and add it to the meat, mix and let cook for another 10 minutes.
- Slice the zucchini thinly, add them to the pan and cook for 5-7 minutes.
- Chop the parsley and add it to the pan, mix and cook for an additional 2-3 minutes.
- Squeeze the lemon and add it to the pan, mix and let infuse for 2-3 minutes.
- Serve the porcheddu hot, with salt and pepper to taste.
