Ingredients

  • 500 g of wild boar meat
  • 2 onions
  • 2 garlic cloves
  • 200 g of raw prosciutto
  • 100 g of zucchini
  • 50 g of parsley
  • 1 lemon
  • extra virgin olive oil
  • salt and pepper

Method

  1. Cut the wild boar meat into even pieces and season with salt and pepper.
  2. In a pan, start cooking the extra virgin olive oil, add the onions and garlic, and sauté on medium heat.
  3. Add the wild boar meat and cook for 20-25 minutes on medium heat, stirring occasionally.
  4. Cut the raw prosciutto into strips and add it to the meat, mix and let cook for another 10 minutes.
  5. Slice the zucchini thinly, add them to the pan and cook for 5-7 minutes.
  6. Chop the parsley and add it to the pan, mix and cook for an additional 2-3 minutes.
  7. Squeeze the lemon and add it to the pan, mix and let infuse for 2-3 minutes.
  8. Serve the porcheddu hot, with salt and pepper to taste.
