Ingredients

  • 1.5 kg of tripe
  • 1 onion
  • 2 carrots
  • 2 cucumbers
  • 2 garlic cloves
  • 200 g of lard
  • 1 liter of beef broth
  • 100 ml of white wine
  • salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped parsley
  • 1 lemon

Method

  1. Clean the tripe and cut it into thin slices.
  2. In a pan, heat the olive oil and sauté the garlic.
  3. Add the onion, carrots, and cucumbers, sauté for a few minutes.
  4. Add the tripe and lard, cover with beef broth and white wine.
  5. Bring to a boil, reduce the heat, season with salt and pepper, and simmer slowly for 1-1.5 hours.
  6. Add the parsley and lemon juice, mix well, and serve hot.
  7. Drizzle the dish with a bit of olive oil before serving.

In the city of Fermo, trippa alla povera has become a popular dish due to its economical recipe and unique texture. The name comes from the fact that it was prepared with affordable ingredients suitable for the less wealthy.
