A classic Piuran dish, Seco de Chancho is a robust and filling stew perfect for chilly winter afternoons.

Ingredients

  • 4 pork shanks
  • 2 onions
  • 1 zucchini
  • 1 red bell pepper
  • 2 garlic cloves
  • 300 ml of palm oil
  • 200 ml of water
  • 1 tablespoon of chili flakes
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of white wine vinegar
  • 1 tablespoon of soy sauce

Method

  1. Season the pork shanks with palm oil and chili flakes, and sear them in a pan until they form a crust.
  2. In the same pan, add the onions, garlic, bell pepper, and zucchini, and cook until the vegetables soften.
  3. Pour in the water, add salt, pepper, and white wine vinegar, and bring to a boil.
  4. Reduce the heat and simmer the stew at a quick boil for about 2 hours, or until the meat is tender.
  5. Add the soy sauce and let it rest for 10 minutes before serving.

The story

Seco de Chancho is a culinary tradition dating back to colonial times, when pork was abundant and the poor made use of every part of the pig to prepare nutritious dishes.
