Ingredients

  • 200g of pizza dough
  • 400g of anchovy fillets
  • 2 onions
  • 6-8 garlic cloves
  • 100g of butter
  • Salt and pepper to taste
  • 2 eggs
  • Olive oil for frying

Method

  1. Prepare the pizza dough and roll it out into a thin circle.
  2. In a pan, start melting the butter and add the onions and garlic cloves.
  3. Once the onions are soft, add the anchovy fillets and continue cooking for 5-10 minutes.
  4. In another bowl, beat the eggs with salt and pepper.
  5. Spread the onion and anchovy mixture evenly over the pizza dough.
  6. Lightly brush the edges with olive oil.
  7. Fry in a hot pan with olive oil until the dough is golden.
  8. Remove from heat, pour the eggs over the top and gently stir.
  9. Serve hot.

The story

Pissaladière originated in Northern France but became a specialty of Nice cuisine, where onions and anchovy brine have become culinary symbols.
