Pissaladière
A crisp carbonara, onion, and garlic flatbread, perfect for an aperitivo in spring.

Ingredients
- 200g of pizza dough
- 400g of anchovy fillets
- 2 onions
- 6-8 garlic cloves
- 100g of butter
- Salt and pepper to taste
- 2 eggs
- Olive oil for frying
Method
- Prepare the pizza dough and roll it out into a thin circle.
- In a pan, start melting the butter and add the onions and garlic cloves.
- Once the onions are soft, add the anchovy fillets and continue cooking for 5-10 minutes.
- In another bowl, beat the eggs with salt and pepper.
- Spread the onion and anchovy mixture evenly over the pizza dough.
- Lightly brush the edges with olive oil.
- Fry in a hot pan with olive oil until the dough is golden.
- Remove from heat, pour the eggs over the top and gently stir.
- Serve hot.
The story
Pissaladière originated in Northern France but became a specialty of Nice cuisine, where onions and anchovy brine have become culinary symbols.
