Pimientos de Padre Isidro

A traditional Madrid dish that combines the heat of the pimientos with the crunchiness of toasted bread.

Ingredients
- 10-12 red bell peppers
- 200 g of toasted bread
- 100 ml of extra virgin olive oil
- 50 g of raw ham
- 50 g of butter
- Salt and pepper to taste
- 1 tablespoon of balsamic vinegar
Method
- Prepare the bell peppers by cutting off the tops and removing the seeds.
- Make a long slit down each pepper, but do not cut them in half.
- Preheat the oven to 200°C and bake the peppers for 20-25 minutes, until they become soft.
- Toast the bread and place it in a pan with olive oil and butter, cooking until golden.
- Slice the raw ham into thin strips.
- Arrange the peppers with the toasted bread, ham, and a sprinkle of salt and pepper.
- Drizzle a bit of balsamic vinegar over the peppers to add a touch of acidity.
The story
Pimientos de Padre Isidro is a traditional Madrid dish with its origins in a historic bar where a monk would prepare these pimientos during mass. The name comes from the fact that Father Isidro, known for his generosity, would share these with the poor.
