Ingredients
- 4 pig's trotters
- 1 liter of water
- 2 onions
- 3 garlic cloves
- 2 red bell peppers
- 100 grams of parsley
- 100 grams of extra virgin olive oil
- Salt and pepper to taste
Method
- Clean the pig's trotters thoroughly and boil them for about 1 hour in salted water.
- Chop the onions and garlic cloves and sauté them in a pan with extra virgin olive oil.
- Add the chopped red bell peppers and cook for a few minutes.
- Add the pig's trotters to the pan with the sautéed ingredients and add the parsley.
- Cover and cook on low heat for 1-2 hours, checking the water level and adding more if needed.
- Serve hot with salt and pepper to taste.
