Ingredients

  • 4 pig's trotters
  • 1 liter of water
  • 2 onions
  • 3 garlic cloves
  • 2 red bell peppers
  • 100 grams of parsley
  • 100 grams of extra virgin olive oil
  • Salt and pepper to taste

Method

  1. Clean the pig's trotters thoroughly and boil them for about 1 hour in salted water.
  2. Chop the onions and garlic cloves and sauté them in a pan with extra virgin olive oil.
  3. Add the chopped red bell peppers and cook for a few minutes.
  4. Add the pig's trotters to the pan with the sautéed ingredients and add the parsley.
  5. Cover and cook on low heat for 1-2 hours, checking the water level and adding more if needed.
  6. Serve hot with salt and pepper to taste.
