Pickled Turnips with Meatballs and Rice

A traditional Ashkelon dish, this is a delightful mix of pickled turnips, meatballs, and rice soaked in tahmura, a salty brine.

Ingredients
- 200 g of turnips, cut into pieces
- 100 g of minced meat
- 2 onions, chopped
- 1 tablespoon of ginger, chopped
- 1 tablespoon of black pepper
- 1 tablespoon of salt
- 200 ml of tahmura
- 100 g of rice
- 1 egg
- Oil for frying
- 1 tablespoon of vinegar
- 2 tablespoons of olive oil
Method
- In a pot, put the cut turnips and cover them with tahmura. Boil for 15-20 minutes.
- In the same pot, add the onions and ginger and cook on medium heat for 5 minutes.
- In a bowl, mix the minced meat with salt, pepper, and olive oil. Add the egg and mix well.
- Form the meatballs with your hands and fry in a pan with hot oil.
- In the same pan, add the rice and cook for 2-3 minutes.
- Add the vinegar and tahmura, mix well and let it boil for 10-15 minutes.
- Finally, add the cooked turnips and meatballs, mix and serve hot.
