Pickled Turnips

A delicious salted turnip dish, typical of the Ashkelon region in Israel.

Ingredients
- 4 turnips
- 1 tablespoon salt
- 1 tablespoon wine vinegar
- 1 tablespoon olive oil
- 1 chili pepper
- 1 garlic clove
- 1 tablespoon fennel seeds
- 1 mint leaf
- Water to cover
Method
- Wash the turnips thoroughly and cut them into small pieces.
- In a pot, mix salt, wine vinegar, olive oil, chili pepper, garlic, fennel seeds, and mint.
- Add the cut turnips and cover with boiling water.
- Cook over medium heat for 15-20 minutes, or until the turnips are tender.
- Let cool, then seal in a covered container.
- Refrigerate for at least 24 hours before serving.
- Serve cold as a condiment or as a main dish.
